Ratatouille

Wash and cut two zucchinis,one eggplant,a green pepper,a red pepper and four tomatoes in pieces.Chop an onion.
In a pan,pour a little olive oil and sauté the different vegetables one after the other for five minutes until golden.After cooking them, add the tomatoes and onion,reduce the heat and mix well.Add some herbs like thyme,rosemary....a bay leaf,salt and pepper.Cover and simmer for  40 minutes,stirring regularly. Ten minutes before the end of cooking time,add two beautiful crushed garlic cloves and cover again.Season to taste.
